CANAPES - CRAB AND CUCUMBER

Category: Chilled Appetizers

Makes 24 servings.

1 English cucumber, cut into 1/2-inch slices

Filling

1/4 c. mayonnaise
2 T. chopped fresh chives
1 T. coarse grain mustard
1 tsp. grated lemon rind
1 1/2 c. cooked crab meat
salt and pepper

curly endive leaves
additional chopped fresh chives

Using melon-baller, scoop out center of each cucumber, forming a hollow cup, and leaving bottom intact.
Prepare filling. In medium bowl, mix mayonnaise, chives, mustard and lemon rind to blend.
Add crab meat and toss gently to combine - do not break up meat.
Season salad to taste with salt and pepper.
Place small leaf of curly endive in cucumber cup; spoon 2 teaspoons salad into each cup.
Garnish with additional chives; chill before serving.
