Makes 6 to 8 servings.
3 avocados
2 T. lemon juice
salt and pepper
3 tomatoes, seeded and coarsely chopped
1 bunch green onions, chopped
1 c. pitted ripe olives, chopped
1 c. sour cream
1/2 c. mayonnaise
1 pkg. taco seasoning
1 10-oz. can refried beans
2 c. shredded Old Cheddar cheese
Tortilla chips
Cut each avocado lengthwise in half; remove each pit.
With spoon, scoop out flesh from peel into medium bowl.
In a medium bowl, mash avocado together with with lemon juice, salt and pepper.
Stir tomatoes, onion and olives into avocados.
In a bowl, combine sour cream, mayonnaise and taco seasoning.
Spread refried beans in bottom of a large shallow bowl.
Top with layers of avocado mixture and sour cream mixture.
Sprinkle with green onions, tomatoes, and olives; cover with grated cheese.
Serve with tortilla chips.
