EGGS - HAM HASH

Makes 6 servings.
1/4 c. butter
1 onion, chopped
12 oz. cooked ham, diced
1 lb. cooked potatoes, diced
2 c. grated Old Cheddar cheese
2 T. ketchup
2 T. Worcestershire sauce
salt and pepper
6 eggs
Tabasco sauce
2 T. chopped fresh parsley
Preheat oven to 325F.
Butter a 9 x 13-inch baking dish.
Melt 2 tablespoons of the butter in a skillet.
Add onion; cook until soft, stirring occasionally.
Turn onion into a large bowl; add ham, potatoes, cheese, ketchup and Worcestershire sauce.
Season to taste with salt and pepper; stir to combine.
Spread half the hash into baking dish in a layer about 1 inch deep.
Bake at 325F for 10 minutes.
Remove from oven; make 6 hollows in top of hash. Slip an egg into each.
Melt the remaining butter in a small pan. Season with Tabasco sauce to taste.
Dribble the seasoned butter over the eggs and hash.
Return to oven and bake at 325F for 15 to 20 minutes, or until the eggs are set and cooked to taste.
Serve immediately, in baking dish, garnished with chopped parsley.
