Makes 4 servings.
1 1/4 c. all-purpose flour
1/2 c. Instant Cream of Wheat cereal, uncooked
1 egg, beaten
1 1/2 c. buttermilk
1/2 c. granulated sugar
1 tsp. baking powder
1 tsp. baking soda
1/4 c. vegetable oil
1/2 tsp. salt
Heat a skillet over medium heat.
In a large bowl, combine all ingredients until smooth.
Pour the batter by 1/4 cup scoop into a pan coated with cooking spray and cook pancakes until brown.
