BEEF - MEATLOAF - BROWN SUGAR GLAZE

Makes 8 servings.

1/2 c. brown sugar, packed
1/2 c. ketchup
1 1/2 lb. lean ground beef
3/4 c. milk
2 eggs
salt and pepper
1 onion, chopped
1/4 tsp. ground ginger
3/4 c. finely crushed saltines

Preheat oven to 350F. Spray a 4 x 9-inch loaf pan with cooking spray
Press brown sugar in bottom of the loaf pan and spread ketchup over sugar.
In a mixing bowl, thoroughly mix ground beef, milk, eggs, onion, ginger and saltines; season with salt and pepper to taste.
Shape into a loaf and place on top of ketchup in loaf pan.
Bake at 350F for 1 hour or until juices are clear.
