Makes 4 servings.
4 chicken breast fillets
3/4 c. peeled, chopped apple
1/4 c. shredded Old Cheddar cheese
2 T. chopped pecans
2 T. brown sugar
1 tsp. ground cinnamon
3 T. dried bread crumbs
2 dashes Seasoning Blend*
1 T. butter
1/2 c. dry white wine
1/2 c. chicken broth
1 tablespoon water
1 1/2 tsp. cornstarch
1 T. chopped fresh parsley
Set aside 2 tablespoons of chopped apple.
Combine remaining apple, cheese, pecans, brown sugar, cinnamon and bread crumbs. Set aside.
Place chicken fillets in a freezer bag and pound each to 1/4-inch thickness.
Remove from bag and sprinkle each with a few dashes of Seasoning Blend (see below).
Divide apple mixture between chicken breasts; roll up each breast. Secure with toothpicks.
Melt butter in a skillet over medium heat. Brown stuffed chicken breasts.
Add wine, broth and reserved apple. Cover. Simmer for 15 to 20 minutes, or until chicken is no longer pink.
Transfer chicken to a serving platter.
Combine water and cornstarch; stir into juices in pan. Cook and stir until thickened. Pour gravy over chicken, and garnish with parsley. Serve.
Seasoning Blend
Combine 1 tsp. of each of the following:
black pepper, thyme, sage, seasoning salt and curry powder. Stir to blend.
