ZUCCHINI - TOMATO PARMESAN

Makes 6 to 8 servings.

1/4 c. vegetable oil
8 zucchini, thinly sliced
1 onion, chopped
1 clove garlic, minced
1 T. salt
1/4 tsp. pepper
1/4 tsp. dried oregano
1/4 tsp. dried rosemary
2 28-oz. cans stewed tomatoes
2 T. chopped fresh parsley
1/2 c. grated Parmesan cheese

Heat oil in a large skillet; add zucchini, onion and garlic.
Sauté, stirring often, until zucchini is tender; stir in salt, pepper, oregano and rosemary.
Add tomatoes and parsley.
Cover and simmer for 5 minutes, or until heated through.
Turn into servings dish; sprinkle with Parmesan cheese.
