PUDDING - CANNOLI CREAM

Makes 12 servings.

4 oz. pkg. almond paste
12 oz. whole-milk ricotta cheese
3/4 c. chilled whipping cream
1/2 T. Amaretto liqueur
1/2 T. powdered sugar
1 tsp. ground cinnamon
6 oz. bittersweet chocolate, chopped
3/4 c. sliced almonds, toasted
24 Cannoli shells
powdered sugar

Blend almond paste in food processor until coarse crumbs form.
Transfer almond crumbs to large bowl; add ricotta cheese and stir to blend.
In another large bowl, combine cream, Amaretto, powdered sugar and cinnamon in.
Using electric mixer, beat cream mixture until firm peaks form
Fold whipped cream into ricotta mixture.
Fold in chopped chocolate and toasted sliced almonds.
Spoon cream mixture into pastry bag; refrigerate.
Just before serving, pipe filling into Cannoli shells.
Dust with powdered sugar and serve immediately.
