BEEF - MEATLOAF - BROWN GRAVY

Makes 6 servings.

1 lb. medium ground beef
1/2 lb. lean ground pork
1 onion, minced
1 stalk celery, minced
1 carrot, grated
3/4 c. quick-cooking rolled oats
1/2 c. skim milk powder
2 c. beef stock
1 tsp. thyme
1/2 tsp. sage
salt* and pepper
1/2 tsp. dry mustard
Pinch allspice
2 T. all-purpose flour

Preheat oven to 350F.
In a medium bowl, combine ground beef, pork, veal, onion, celery, carrot, rolled oats and skim milk powder; mix well.
Add 1/2 cup of the beef stock, thyme, sage, salt, pepper, mustard and allspice; combine thoroughly.
Transfer to 8 x 4-inch loaf pan.
Bake at 350F for 30 minutes. Pour 1/2 cup of remaining stock over and cook for an additional 45 minutes, or until meat is well browned.
Meanwhile, blend flour with remaining 1 cup cool stock and set aside.
When meat loaf is cooked, drain pan juices into a saucepan; stir in reserved stock mixture.
Cook, stirring, over medium-high heat until thickened.
Serve gravy in warm gravy boat.
* If using beef stock from powder or cubes, do not add salt.
