SEAFOOD - FISH CAKES - NEW ENGLANDER\'S CRAB

Makes 4 servings.

1 c. mayonnaise
1 egg, beaten
1/3 c. minced green or sweet red pepper
3 T. minced onion
1 1/2 c. cooked kernel corn
1 tsp. dry mustard
1/2 tsp. black pepper
1 lb. fresh lump crab meat, drained and flake
2 - 2 1/2 c. fresh breadcrumbs or finely crushed soda crackers
2 T. butter
2 T. vegetable oil
Tartar sauce

Combine mayonnaise and egg in a large bowl; mix in green or red pepper, onion, corn, mustard and black pepper.
Stir in crabmeat and 1 to 1 1/4 cups breadcrumbs, or enough to hold mixture together. Shape into 8 patties.
Coat patties with remaining breadcrumbs.
Heat butter and oil in a large heavy skillet; add crab cakes in batches and fry until lightly browned on both sides. Serve with tartar sauce.
