FETTUCCINE - SMOKED SALMON AND DILL

Category: Noodles in Sauce

Makes 4 servings.

1/4 c. unsalted butter
1 chopped onion
1/2 lb. smoked salmon, diced
3/4 c. whipping cream
4 oz. (1/2 pkg.) cream cheese, diced
1/4 c. chopped fresh dill
2 green onions, chopped
salt and pepper
1 lb. fettuccine, cooked and hot
1/2 c. grated Parmesan cheese

In skillet, melt butter; saute onion until soft and fragrant, but do not brown.
Add smoked salmon and whipping cream; heat through.
Add cream cheese and heat gently to soften.
Place fettuccine in pasta bowl or on platter.
Pour sauce over; toss gently and sprinkle with Parmesan cheese.
Season with salt and pepper to taste.
