CHICKEN BREASTS - STUFFED - SALTIMBOCCA

Makes 6 servings.

6 chicken breasts fillets
6 slices deli ham
6 slices Swiss cheese
1/4 c. all-purpose flour
1/4 c. grated Parmesan cheese
1/2 tsp. salt
1/4 tsp. pepper
2 T. vegetable oil
1 10-oz. can condensed cream of chicken soup
1/2 c. dry white wine
3 c. rice, cooked and hot

Flatten chicken fillets with a mallet to 1/4-inch thickness.
Top each piece with a slice of ham and Swiss cheese; roll up tightly and secure with toothpicks.
In a shallow bowl, combine flour, Parmesan cheese, salt and pepper
Roll chicken in flour mixture; refrigerate for 1 hour.
In a large skillet, brown chicken roll-ups in oil on all sides; transfer to slow cooker.
Combine soup and wine; pour over chicken.
Cover and cook on LOW for 4 to 6 hours.
Remove roll-ups and stir sauce.
Discard toothpicks; serve over rice.
