FETTUCCINE - GORGONZOLA AND SPINACH

Category: Noodles in Sauce

Makes 6 servings.

1/2 lb. fettuccine noodles, cooked and hot
1/2 c. creamed cottage cheese
1 10-oz. pkg. frozen spinach, cooked, drained and chopped
1/4 c. grated Parmesan cheese
1/4 tsp. onion powder
1 c. whipping cream
3 oz. Gorgonzola cheese, diced
salt and pepper
grated Parmesan cheese for serving

Place fettuccine in large pot.
Over low heat, stir in cottage cheese, spinach, 1/4 cup Parmesan cheese and onion powder.
In small saucepan, heat cream until it comes to a boil; add Gorgonzola cheese. Stir to melt.
Season to taste with salt and pepper.
Turn noodle mixture out onto platter. Top with Gorgonzola sauce.
Sprinkle with extra Parmesan cheese to serve.
