SPAGHETTI - LOBSTER AND MUSHROOMS SAUCE

Category: Noodles in Sauce

Makes 4 servings.

3/4 c. sliced fresh mushrooms
3 green onions, chopped
1/2 c. dry white wine
1 clove garlic, minced
2 T. butter
2 T” flour
1 c. milk
1 lb. cooked lobster meat, chopped
1/2 c. sour cream
1 lb. spaghetti, cooked and hot
grated Parmesan cheese
Paprika
1/4 c. chopped fresh parsley

Combine mushrooms, green onions, garlic and wine in a large skillet; bring to a boil.
Reduce heat and simmer, uncovered, until liquid is absorbed.
Add butter, stirring to melt.
Add flour and cook, stirring constantly for 1 minutes.
Gradually stir in milk and cook, until mixture thickens and begins to boil.
Stir in lobster and sour cream; cook until heated through but not boiling.
Serve over pasta; sprinkle with cheese and paprika. Garnish with parsley.
