PASTRY - CHICKEN FAJITA PIZZA

Makes 6 servings.

1 16-inch, or two 10-inch, prepared pizza crust(s)
1 T. olive oil
4 chicken breast fillets, cut into thin strips
2 tsp. chili powder
1 tsp. salt
1/2 tsp. garlic powder
1 onion, thinly sliced
1/2 green pepper, thinly sliced
1/2 red pepper, thinly sliced
1/2 c. salsa
2 c. shredded Monterey Jack cheese

Heat oven to 425F. Spray baking sheet(s) with cooking spray.
Place pizza crust(s) on baking sheets; set aside.
In a large skillet, heat oil over medium-high heat until hot.
Add chicken; sprinkle with chili powder, salt and garlic powder.
Cook and stir 3 to 5 minutes or until lightly browned.
Add onion and pepper slices; cook and stir an additional 2 to 3 minutes, or until chicken is no longer pink and vegetables are tender-crisp.
Spoon chicken mixture evenly over pizza curst(s).
Spoon salsa over chicken and sprinkle with cheese.
Bake at 425F for 12 to 16 minutes, or until crust is golden brown and cheese is melted.
