NUTS - CINNAMON ROASTED ALMONDS

Makes 4 cups.

2 egg whites
2 tsp. cold water
4 c. whole almonds
1/2 c. brown sugar, packed
1/2 c. granulated sugar
1/2 tsp. coarse salt
2 tsp. ground cinnamon

Preheat oven to 250F. Spray a baking sheet with cooking spray.
Lightly beat egg white; add water and beat until frothy.
Add nuts; stir until well coated.
Mix brown and granulated sugars, salt and cinnamon, and sprinkle over the nuts.
Toss to coat; spread evenly on the baking sheet.
Bake at 250F for 60 minutes, stirring occasionally, until golden.
Allow to cool; store nuts in airtight containers.
