SALAD - SEAFOOD - SHRIMP FINESSE

Makes 4 servings.

2 c. medium shrimp, cooked, peeled and deveined.
1/2 c. diced celery
4 hard-boiled eggs, minced
1 T. prepared mustard
1/4 c. mayonnaise
1 T. lemon juice
1 T. granulated sugar
salt and pepper
Old Bay Seasoning (Other Stuff Category)

12 Butter Lettuce leaves
4 green onions, thinly sliced
8 lemon slices, cut in half

Chop shrimp coarsely; transfer to medium bowl and add celery and eggs.
Mix together mustard, mayonnaise, lemon juice and sugar until smooth; add to shrimp mixture.
Season with salt and pepper to taste; add a dash of Old Bay Seasoning.
Refrigerate until ready to serve.
At serving time arrange 3 lettuce leaves on each plate.
Scoop an equal amount of shrimp onto top of each; garnish with green onion and lemon slices.
