SALAD - VEG - SPINACH, FETA AND PEAR

Makes 4 servings.

2 pears, peeled and cored
1/2 c. dry sparkling wine
1/2 c. lemon-lime soda
4 c. baby spinach leaves
1 shallot, finely chopped
1/2 cup crumbled feta cheese
1/2 cup toasted pine nuts
1/2 cup raspberry vinaigrette

Cut pears into thin slices; place in a bowl and pour wine and soda over top.
Refrigerate marinating pears while preparing the salad.
Place spinach in a serving bowl; add shallot, feta cheese and pine nuts.
Spoon spinach mixture onto serving plates.
Drain pears, reserving 1/4 c. of the soda marinade.
Arrange pear slices in a fan shape on top of each salad plate.
Stir reserved soda marinade into raspberry vinaigrette; drizzle over salads.
