Makes 6 servings.

1 1/2 lb. shrimp, peeled and deveined
3 cloves garlic, minced
1 T. minced fresh ginger root
2 green onions, minced
3 T. peanut oil

Marinade

1 T. soy sauce
1 T. rice wine
1/2 tsp. granulated sugar
1 T. cornstarch

Sauce

1/2 c. chicken stock
2 T. soy sauce
1/2 tsp. granulated sugar
1 tsp. sesame oil
1 T. rice wine
2 tsp. cornstarch
1/2 tsp. salt

Combine shrimp with marinade ingredients and let marinate at least 20 minutes. Combine sauce ingredients and keep close at hand; have garlic, ginger and onions close by.
Heat wok until hot; add oil. Add garlic, ginger and onions; stir-fry about 30 seconds, until fragrant.
Add shrimp, stirring well to separate; stir-fry 5 minutes or until shrimp are done.
Stir up sauce ingredients (cornstarch usually sinks to bottom) and add to shrimp mixture.
Bring to boil and cook until sauce thickens.
