4 c. chopped, peeled tomatoes
1 c. tomato juice or vegetable juice
1 c. beef broth
1/2 c. chopped, seeded cucumber
1/4 c. minced green sweet pepper
1/4 c. minced chopped onion
2 T. snipped fresh basil
1 T. olive oil
2 T. lemon or lime juice
1 clove garlic, minced
1/2 tsp. ground cumin
1/4 tsp. Tabasco sauce
2 T. Amber Rum (optional)
Croutons
In a large mixing bowl combine tomatoes, tomato juice, beef broth, cucumber, sweet pepper, onion, basil, oil, lemon or lime juice, garlic, cumin, Tabasco sauce and Rum (if desired).
Cover and chill for 2 to 24 hours.
To serve, ladle soup into chilled bowls or mugs. Top each serving with croutons.
