No-Mayonnaise Potato Salad

- 2 pounds red-skinned potatoes, unpeeled
- 1 small red onion, thinly sliced
- 1/2 cup sliced black olives
- 2 green onions, sliced
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 1 clove garlic, minced
Cook the potatoes in boiling water until fork-tender. Let cool slightly. Cut the potatoes into chunks and place in a bowl. Add the onion, olives, and green onions. Gently mix. In a small bowl, whisk together the olive oil, vinegar, mustard, salt, pepper, and garlic. Gently stir into the potato mixture, completely coating the potatoes in the dressing. Serve immediately.
