- 2 cups fresh corn kernels
- 3/4 cup chopped red bell pepper
- 1/2 cup chopped scallion
- 1/4 cup chopped cilantro
- 4 green olives, sliced
- 2 tablespoons lemon juice
- 2 tablespoons extra-virgin olive oil
- celtic sea salt to taste, optional
- 1/2 teaspoon cumin
- 1 pinch cayenne, to taste
In a small bowl, combine the corn, red pepper, scallion, cilantro, olives, lemon juice, olive oil, salt, cumin, and cayenne. Toss together.
