  • 4 chicken breasts
  • 1 lime, juice and zest of
  • 7 ounces pineapple juice
  • 1 clove garlic, peeled and crushed
  • 1 tablespoon tomato puree
  • 4 tablespoons vodka
  • 2 tablespoons white wine vinegar
  • salt and pepper, to taste

Preheat the oven to 350 degrees F.

Cut slashes in the chicken breasts without going all the way through. Mix all the other ingredients together, rub into the chicken making sure some of the marinade goes into the slashes and marinate the chicken for at least 4 hours.

Heat 1 tablespoon oil in a griddle pan and brown the marinated chicken, turning once half way through cooking time. Do this on both sides of the chicken. Reserve the marinade.

Bring the marinade to a boil and simmer until it is reduced by at least half. Transfer the chicken to an ovenproof dish, pour over the marinade and cook for 15 minutes until the chicken is cooked through.
