- 1 pound ground beef
- 1 medium onion, chopped
- 1 can (28 ounce size) crushed tomatoes, undrained
- 1/2 cup uncooked white rice
- 3 medium potatoes, peeled and cut into 1/2-inch chunks
- 1 can (15 ounce size) black beans, rinsed and drained
- 1 can (15 ounce size) pinto beans, rinsed and drained
- 1 cup water
***Seasonings***
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon chili powder
- 1 teaspoon Worcestershire sauce
Heat a skillet over medium heat. Add the ground beef and onion and cook, stirring, until the meat is browned. Drain off any excess grease. In the crock pot, in layers add half of the tomatoes, half of the rice, half of the potatoes, and one can of the beans (doesn't matter which can). Add the ground beef and onion mixture. Add the remaining layers of tomatoes, rice, potatoes, and the remaining can of beans. Pour the water over the top then sprinkle with the seasonings. Cover the crock pot and cook on high heat for 4 hours or until the beans are heated through and the rice is tender. Stir gently before serving. Serve hot.
