Beef and Snow Peas in Oyster Sauce

3/4 pound sirloin or flank steak
Marinade:
1 teaspoon cornstarch
1 teaspoon soy sauce
1 teaspoon wine
1 tablespoon oyster sauce
------------------------------------------
1 small onion
2 cups snow peas*
3 tablespoon oil, divided
few dashes of salt
2 tablespoon water
1 tablesppon soy sauce
Preparing ahead:
Cut beef across the grain into 1/8 slices.
Combine with marinade and let stand for 15 minutes. Chop onion coarsley. String snowpeas and rinse. Heat wok over high flame till smoking. Add one tablesppon oil,which should be heated in seconds. Stir onion briefly(lower heat if it tends to burn)
Add snowpeas and stir briefly. Sprinlke salt while stirring. Set aside.
Last minute stir frying:
Heat wok again over high flame till smoking.
Heat the remaining 2 tablespoon oil in the wok till very hot.Stir beef in quickly till it is almost cooked. Add onion, snowpeas,water and soy sauce. Stir a few times then serve.
*Substitute other vegetables such as green peppers and asparagus for snowpeas.
