Baked Potato Fun

1 yukon Gold potato -- baked
1/4 cup black beans
1 ounce avocado
2 tablespoons ricotta cheese, part skim milk
1/4 cup scallion -- finely chopped
1 teaspoon butter
1 slice turkey bacon -- crumbled

Directions:

After baking potato, cut in half and remove 3/4 of the potato filling. Set aside.

Fill one of the potato halves with beans, avocado and ricotta (or FAGE Greek Yogurt).

Take the removed potato filling and puree with scallions, butter and turkey bacon. Stuff remaining 1/2 of potato with this filling.
