Creme Brulee

4 c. heavy whipping cream
9 egg yolks
3/4 c. sugar
1 tea. vanilla
brown sugar
In saucepan, heat cream to 180 degrees, over medium heat stirring frequently. Then, in a large bowl, whisk the egg yolks, sugar and vanilla. When cream reaches 180, slowly stir in the egg mixture. Pour into 8 (6oz) custard cups, place cups in a baking pan. Add one inch of boiling water to pan. Bake uncovered at 325 for an hour or until knife inserted into the center comes out clean. Remove from water and cool for 10 minutes. Sprinkle each cup with 1 1/2 teaspoon of brown sugar. Place on sheet. Broil 6 inches from heat for 3-5 minutes or until caramelized.
