Italian Mushroom Salad

An easy and different salad, especially delightful to mushroom lovers everywhere. It's easy to increase/decrease proportions of celery and mushrooms, depending on personal taste.

4 stalks celery, thinly sliced
8-10 mushrooms (white, crimini, baby bella) thinly sliced
1/2 cup chopped parsley
1/4 cup parmesan cheese, shredded
salt & pepper to taste

Mix ingredients together in bowl and dress with your favorite lemon vinaigrette (lemon juice, olive oil, salt & pepper works great, proportions to your taste)

Serves around 4, depending on how much you love it and how big the servings are
