Easy to make, fat free, low calorie, great tasring.Makes 16 servings, approx.143 calories per serving.
1 pkg. Angel Food Cake mix (choose a 1-step mix.) The others will do fine,but there's no need to use the ones where you have to beat the egg white powder separately).
1 can 921oz.) blueberry pie filling
1/4 cup powdered sugar
Mint leaves, maraschino cherries,or other garnishes, if desired.
Preheat oven to 350 degrees. Line two 15x10x1 jelly -roll pans or deep sheets with aluminum foil.
Prepare cake mix following package directions.
Divide between the two pan, spreading evenly. Cut through batter with a knife or spatula to remove large air bubbles.
Bake at 350 degrees for 15 minutes or until set.
Invert cakes at once onto a clean lint free
towels generously dusted all over with powdered sugar.
Remove foil carefully. It comes off easily
but be gentle with the cake.
Roll up each cake jelly roll fashion, starting at the short end.
Cool completely.
Unroll cakes. Spread 1/2 of the pie filling over cakes, spreading within 1" of th edges on each cake.
Reroll and place seam-side down on serving plate. Dust with powdered sugar and garnish if desired.
