1/2 cup each finely diced onion, carrots, celery and potatoes.
1/4 cup margarine
1/4 cup all purpose flour
1 T. cornstarch
4 cups milk
4 cups chicken broth
1/8 t. baking soda
1 lb sharp processed american cheese or less

Saute onions, carrots, celery, and potatoes in margarine in large Dutch oven 5 minutes or until tender.
Add flour and cornstartch, stirring until smooth. Cook 1 minute, stirring constantly, Gradually add milk and chichen broth. Cook over medium heat, stirring until thickened and bubbly. Stir in soda and cheese. Reduce heat to low and cook until cheese melts.
