Baked Breaded Cod

- 1/4 cup mayonnaise
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon lemon juice
- 1/2 teaspoon salt
- 1/2 teaspoon anchovy paste
- 1/4 teaspoon ground black pepper
- 1/2 cup fresh bread crumbs
- 3 tablespoons chopped fresh parsley
- 4 cod fillets
- lemon wedges
Preheat the oven to 450 degrees F. Grease a rimmed baking sheet. Combine the mayonnaise, Parmesan, lemon juice, salt, anchovy paste, and black pepper in a bowl and mix well. Combine the breadcrumbs and parsley in a shallow dish. Spread some of the mayonnaise mixture on one side of the cod. Dredge the coated side in the breadcrumb mixture and then place the fish crumb side up on the baking sheet. Place the baking sheet in the oven and bake at 450 degrees F for 15-20 minutes or until the fish is cooked through and the breadcrumbs are toasted. Serve the baked cod with lemon wedges.
