Pico de Gallo - Salsa

Pico de Gallo - Salsa

Serves 8 as appetizer

Ingredients:
6 large ripe tomatoes, chopped
2 jalapeno peppers, diced (for less spicy salsa remove ribs and seeds)
1 medium red onion, diced
1/2 cup chopped cilantro (use leaves and stems)
2 limes
salt and pepper to taste

Instructions:
Combine tomatoes, jalapeno peppers, onion, cilantro, salt and pepper in large bowl. Squeeze the juice from the 2 limes into a bowl, remove any seeds and add to the salsa. Mix everything together and place in the refrigerator for at least 2 hours, preferably overnight.

Note: the longer it sits in the refrigerator the spicier it will be.

Serve with tortilla chips as an appetizer.
