Zucchini Pie

2 c. water
4 c. peeled, sliced zucchini
½ c. packed brown sugar
½ c. sugar
2 Tbsp. flour
2 Tbsp. lemon juice
2 tsp. ground cinnamon
1 tsp. cream of tartar
dash of salt

Topping

1 c. flour
¼ c. packed brown sugar
¼ c. sugar
½ c. cold butter or margarine

In a saucepan, bring water to a boil. Add zucchini and cook for 3 minutes.
Drain the zucchini and pat dry with paper towel. In a bowl, combine the
zucchini, brown sugar, sugar, flour, lemon juice, cinnamon, cream of tartar,
and salt. Transfer to a greased 1½-quart baking dish.

For topping, in a bowl, combine the flour, brown sugar, and sugar. Cut in
butter until mixture resembles coarse crumbs. Sprinkle over zucchini
mixture. Bake at 375° F for 45 to 50 minutes or until topping is golden
brown and filling is bubbly around edges. Serves 6-8.
