Waldorf Potato Salad

Ready in: 30-60 minutes
- 1 1/2 pound small red potatoes
- 5 tablespoons cider vinegar
- 3 tablespoons sugar
- 1 small onion, chopped
- 1 teaspoon salt
- black pepper, to taste
- 1 tablespoon sour cream
- 3 tablespoons mayonnaise
- 2 ribs celery, finely sliced
- 3/4 pound ham, diced
- 1/4 cup chopped walnuts
- 2 Granny Smith apples, cored & diced
Cook the potatoes in boiling water for 30 minutes or until fork-tender. Drain well. When cool enough to handle, cut the potatoes in half and place in a large bowl. Meanwhile, in a small saucepan over medium heat, combine the vinegar and sugar. Cook, stirring constantly, until the sugar dissolves. Pour over the potatoes and mix gently. Add the chopped onion, salt, pepper, sour cream, mayonnaise, celery, ham, and apples to the potatoes. Mix gently to combine. Serve warm.
