4 egg whites
1/2 tsp salt
1/2 tsp cream of tartar
1 tsp vanilla
1 c sugar
beat egg whites until they are foamy.
add salt,cream of tartar ,and vanilla.
beat 2 min. and add 1/2 cup of sugar beat thoroughly and add 1/2 c sugar additional beat ,beat til it stands in peaks. spread meringue ,in a pie pan ,which has been lined with buttered wax paper. Place in slow oven,
275 bake 50 min. Make a filling of any prepared lemon filling,when meringue is cool,
put cool filling on top and store in refrig,overnite. Before serving ,cover with sweetened whip cream.UnMold on plate,Serve as pie.
