ingredients:
six eggs
one pound of pure salted butter
1 teaspoon cayenne
1/4 cup lemon juice


directions:
Take the one pound of butter and cut it into small chunks(set aside for later use). Take the eggs and separate the whites from the yolks and put the yolks in a double boiling insert add the lemon juice and cayenne pepper and stir with a fine whisk. Put in the double boiler and stir constantly till it thickens up carefully take the butter chunks and add to mixtur of eggs, cayenn, and lemonjuice. keep stirring till butter is completely melted remove from double boiler and serve.
