Split Pea Soup With Carrots And Celery

Serves/Makes: 10 cups
Ready in: 2-5 hrs
- 1 pound dried split green peas
- 2 cups chopped onion
- 3 cloves garlic, peeled but left whole
- 8 cubes vegetable bouillon
- 1 bay leaf
- 12 cups water
- 1 cup chopped baked ham
- 1 cup chopped celery
- 3/4 cup peeled and chopped carrots
- 2 whole sprigs fresh thyme
- 1/4 teaspoon black pepper
- 1 dash hot pepper sauce
Combine the split peas, onion, garlic, vegetable bouillon, bay leaf, and water in a large saucepan over medium-high heat. Bring to a boil then reduce the heat to a simmer. Let simmer, uncovered, for 1 hour. Stir. Add the ham, celery, carrots, and thyme. Let simmer for 1 more hour or until the split peas and vegetables are tender. Remove the garlic cloves, bay leaf, and thyme sprigs. Add the black pepper, hot sauce, and pimiento (if using). Mix well and serve warm.
