Chicken Tot Pie

- 1 package (16 ounce size) frozen mixed vegetable
- 2 cups chopped cooked chicken
- 1 can (10.75 ounce size) condensed cream of chicken soup, undiluted
- 1/4 cup milk
- 1 teaspoon dried thyme
- 4 cups frozen tater tots
Heat oven to 425 degrees F. In a large saucepan over medium heat, combine the soup and milk. Stir until mixed. Stir in the vegetables, chicken, and thyme. Bring to a simmer, stirring frequently. Place the chicken mixture in a 1 1/2 quart casserole dish. Arrange the tater tots on a baking sheet and place in the oven for 10-15 minutes, or until they start to brown. Evenly place the partially cooked tater tots (browned side down) over the chicken soup mixture in a single layer. Reduce the oven temperature to 375 degrees F. Place the casserole in the oven, uncovered, and bake for about 45 minutes or until potatoes are crispy brown and the chicken mixture is bubbling. Cook's Notes: By partially cooking the tater tots before placing them on the chicken mixture they will stay crispier and have better texture, unlike other recipes that often end up with soggy tots. No one likes soggy tots.
