Carrot Cake Waffles

- 1 box (15-18 ounce size) carrot cake mix, plus ingredients called for to prepare
- 1/2 cup chopped pecans or walnuts
- 1/3 cup water
- 2 granny smith apples, peeled, cored, and diced
- 2 tablespoons butter
- 2 teaspoons lemon juice
- sour cream (optional)
Combine the cake mix plus the ingredients called for on the package. Stir in the chopped nuts and water. Melt the butter in a skillet over medium heat. Add the diced apple and stir to coat the apple in the butter. Cover the skillet and reduce the heat to low. Cook until the apples are soft but not mushy. They should retain their shape. Drizzle the lemon juice over the apples and mix well. Preheat and grease the waffle iron as directed by the manufacturer. Add the waffle batter by 1/4 cupfuls. Close the lid and cook the waffles until they are set and golden brown. Remove from the waffle iron and place on individual serving plates. Top each waffle with some of the apples and a dollop of sour cream, if desired.
