- 1 loaf Italian bread, cut into 1-inch cubes
- 1 package (10 ounce size) frozen chopped spinach, thawed and well drained
- 1 package (4 ounce size) pepperoni, coarsely chopped
- 1 large tomato, cored and diced
- 1 cup shredded mozzarella cheese
- 1/2 teaspoon Italian seasoning
- 4 eggs
- 1 cup half and half
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Grease a 12 x 7-inch baking dish. In a bowl, combine the bread cubes, drained spinach, pepperoni, tomato, cheese, and Italian seasoning. Toss to mix. Spread the bread mixture into the bottom of the baking dish. Combine the eggs, half and half, salt and pepper in the bowl. Whisk until the eggs are blended into the mixture. Pour the egg mixture evenly over the bread in the baking dish. Cover the dish with plastic wrap and place in the refrigerator overnight (or for at least 2 hours). Preheat oven to 425 degrees F. Remove the baking dish from the refrigerator and let sit at room temperature while the oven heats. When ready to bake, remove the plastic wrap and cover the dish with aluminum foil. Place in the oven and bake at 425 degrees F for 15 minutes. Remove the foil and bake, uncovered, for 15 more minutes. Remove the dish from the oven and let stand at room temperature for 5 minutes then serve.
