4 egg yolks, separated
1 1/4 cups sugar
dash salt
4 1/2 cups milk
2 teaspoons vanilla
6 heaping Tablespoons cornstarch
1 small can coconut
2 baked (9 inch) pie shells


Beat egg yolks and sugar. Add 1 cup milk and stir until mix dissolves. Add 3 more cups milk and stir well. Place on medium heat. Mix cornstarch in remaining milk and add to the mixture while stirring. Cook until thick. Remove from heat and add vanilla and coconut. Cool and pour into baked pie shells. Top with meringue or cool whip.
