4 medium tomatoes, cut into 1/2-in thick
slices
3 Tbsp Parmesan cheese
1/2 tsp salt
1/2 tsp hot sauce
4 eggs
2 egg whites
1 Tbsp cilantro
1/2 tsp garlic powder
1 cup cooked spaghetti (about 5 ounces
uncooked pasta)
non stick cooking spray

Arrange tomato slices in a single layer on a baking sheet lined with aluminum foil. Bake at 450 for 40 minutes, turning after 20 minutes. Peel and discard skins.
Combine 1 Tbsp Parmesan cheese, salt, hot sauce, eggs, egg whites, cilantro and garlic powder in a large bowl; stir well. Stir in tomato slices and spaghetti; set aside.
Coat skillet with cooking spray and heat over low heat. Add egg mixture, and cook 15 minutes or until set (do not stir). Wrap handle of skillet with foil; broil for 3 minutes or until top is set.
Serve immediately.
