Chicken Breast Rolls with Apricot Oat Stuffing

3/4 cup rolled oats
6 boneless, skinless chicken breast halves
1/2 cup chopped dried apricots
1/2 cup chopped green onions
1/4 cup chopped celery
1 to 2 tsp chopped fresh thyme or 1 tsp
dried thyme
1/2 tsp salt
1/2 tsp pepper
1/2 cup low-fat plain yogurt
1 cup chicken broth

Heat oven to 350F. Spread oats on cookie sheet. Bake for 8-10 minutes to toast oats. Meanwhile, place chicken breast halves between two sheets of plastic wrap. Pound until 1/4-inch thick.
In medium bowl, combine toasted oats, apricots, onions, celery, thyme, salt, pepper, yogurt and 1/4 cup broth. Mix well. Spoon about 1/4 cup oat mixture onto each flattened chicken breast. Roll up. enclosing stuffing and secure with toothpicks.
Spray large nonstick skillet with cooking spray. Heat over medium-high heat until hot. Place chicken rolls, seam side down, in skillet. Cook 10 minutes.
Add remaining 3/4 cup broth. Reduce heat; cover and simmer 10 minutes or until chicken is done. Place rolls on serving platter.
