4-6 boneless, skinless chicken breasts
4 eggs, beaten
1/2 cup butter
1 cup Italian bread crumbs (I use Panko)
1 cup sliced, fresh mushrooms
1/3 cup chicken broth
6 slices Muenster cheese
lemon juice
Preheat oven to 350 degrees.
In a large bowl, place the chicken breasts in the beaten eggs (at least 1 hour) or overnight. Roll the breasts in the crumbs; in a large skillet, fry in butter until golden brown. Place the breasts in an oven casserole. Cover the breasts with the mushrooms and broth; top with the cheese. Sprinkle with lemon juice. Bake, uncovered for 30 minutes.
