1 lb carrots, washed and scrubbed
olive oil
Herb or red wine vinegar
Sea salt and black pepper
Fresh Thyme
3 garlic cloves, minced

Toss carrots with remaining ingredients. Place in roasting pan and cover tightly with foul. Bake at 400 degrees for 35 minutes until just tender. Remove foil and cook 10 minutes until caramelized.
