Ranger Cookies
Ingredients
Part A
1 cup brown sugar
1 cup sugar
1 cup shortening
2 beaten eggs
1 tsp vanilla
Part B
1 tsp baking soda
½ tsp salt
2 cups flour 2 cups Quaker oats
Part C
2 cups plan Special K
1 cup coconut
1 cup chopped pecans
Cream shortening then add sugars.
Mix in remaining ingredients of Part A.
Mix Part B ingredients together.
Add into Part A in small amounts.
Mix ingredients from Part C together.
Add into the Part A/B mixture.
The dough will be rather crumbly.
Roll into small balls and press with a fork.
Bake at 375F for about 7-8 minutes.
Notes:
I found recipes on-line for Ranger cookies. Many used Rice Crispies instead of Special K.
Also, in our oven, at 375, 8 minutes tends to make them a little dry after a day. Try 7 minutes
