6 1/2 oz jar marinated artichoke hearts
1/2 c. olive oil
4 cloves garlic, minced
2 cups sliced shitake or regular mushrooms
1/4 cup oil-packed sun dried tomatoes, chopped
1/2 c. fresh parsley, chopped
1/2 t. salt
1/4 t. pepper
1 lb. angel hair, cooked
1/4 c. grated Parmesan cheese
Drain and chop artichokes, reserving liquid. In skillet add oil and reserved artichoke liquid. Add garlic, mushroom and tomatoes, cook 3 minutes. Add artichokes, parsley, salt and pepper. Cover until heated through. Toss with hot pasta and cheese.
Serves 6
