1 1-1lb. Box Puff Pastry dough
2 T. Unsalted butter
1 c. Frozen cubed hash browns
1 c. Red or green bell peppers, diced
1/2 c. Onion, diced
1 c. Smoked ham, diced
11 Eggs
2 T. Chives
4 oz Cream Cheese
2 T Orange juice
1 Egg
1 T Water
2 T Parmesan

Preheat oven 400 Degrees
Thaw pastry for 30 minutes.
Melt butter in skillet.
Add potatoes and saute 4 minutes.
Stir in bell peppers and onion, saute 3 minutes.
Add ham.
Whisk egg and chives, add to pan, scramble until just set.
S & P, remove from heat.
Stir in cream cheese and juice. Refrigerate.

Unfold pastry on floured work surface.
Roll into 12 x 10 inches, transfer to parchment paper on baking sheet.
Trim pastry, fill with half egg mix and braid pastry. Repeat with 2nd pastry.

To braid:
Cut off top corners of pastry and cut on diagonal on both sides of egg mix. Fold over top and bottom flaps, braid diagonal strips across filling.

Combine remaining egg and water and brush top of pastry. Sprinkle with cheese. Wrap in plastic, refrigerate overnight.
Bake 20-30 minutes until golden. Let cool 5 minutes.
