2 chicken breasts, skinless, boneless
salt and pepper
2 t. oil
1 c. curry sauce
1 c. mushrooms, sliced
2 oz. slivered almonds
1/2 c. cranberries or raisins
1 c. plain yogurt
2 T. chopped cilantro
1 c. basmati rice, prepared according to direction
Brown seasoned chicken in oil in skillet, 2 minutes on each side. Add curry sauce and cover and cook 10 minutes. Stir in mushrooms, almonds and cranberries and cover and cook 5 minutes. Add rice and stir in yogurt and cilantro.
Serves 4.
