2 c. tomato basil pasta sauce
2 t. EVOO
12 mini multi-colored peppers, sliced
8 oz. cream cheese
4 boneless chicken breasts
salt and pepper
4 slices mozzarella cheese

Preheat oven to 375 degrees
Heat pasta sauce in microwave 3 -4 minutes until hot. Stir half way through.
Heat sliced peppers in microwave 3 minutes, then stir in cream cheese.
Place chicken in 9 x 13 casserole, season with salt and pepper. Spoon pepper mix over top, add pasta sauce, sprinkle with cheese and bake covered for 45 minutes or until hot. Add red pepper spice if you want to kick it up.

So easy and very different taste!
